Commercial kitchen extraction provides your workspace with a number of benefits. Removal of unwanted steam and smoke, maintaining safe levels of carbon dioxide and other harmful gases within the kitchen as well as reintroducing fresh replacement air.
Extraction systems are built around a canopy system. A large, overhead structure in which the ducting is connected. Extraction canopies are made in a vast number of sizes, all dependent on what equipment is used. While an extraction canopy system is not technically required when using solely electrical appliances, they are a recommended item due to the more comfortable working environment they produce.
Installation of an extraction system for gas appliances.
When gas appliances are installed in the kitchen, certain canopy sizes must be adhered to. Overhangs on both the sides and front of the appliance must be 300mm minimum. (An oven with a depth of 800mm would require a minimum canopy depth of 1100mm, to account for gas connections behind the oven.
