What is a bain marie?
A bain marie is a commercial food warmer that uses a heated water bath to hold pre-cooked food at safe serving temperature. It gives gentle, even heat without drying out food, which makes it the standard piece of kit for buffets, carveries, and service counters.
What is the difference between a wet well and dry well bain marie?
A wet well bain marie uses heated water in the base to warm food gently and is ideal for sauces and delicate dishes. A dry well bain marie heats the gastronorm pans directly with no water, which is quicker to set up and easier to clean.
What temperature should a bain marie run at?
UK food safety guidance is to hold hot food at 63°C or above. Most commercial bain maries operate between 70 and 90°C in the well, which keeps the food itself safely above 63°C when used correctly.
Are bain maries gas or electric?
Both. Electric bain maries are most common for indoor service counters and plug into a standard 13A or 16A supply. Gas bain maries are used where a power supply is limited or for outdoor catering. H2 stocks both.
How long can food stay in a bain marie?
Food can be held safely for up to 2 hours at 63°C or above. After that, UK Food Standards Agency rules require it to be served, cooled, or discarded. Always rotate stock and check temperatures with a probe thermometer.
Do bain maries come with gastronorm pans?
Some models include gastronorm pans, others do not. H2 product listings state clearly whether pans are supplied. If they are not, GN 1/1, 1/2, and 1/3 pans are available separately and fit standard bain marie wells.
